Seafood Pasta with white wine sauce

As the daughter of a fisherman, I sometimes think I don’t eat enough fish. It’s all about location to be honest. It’s pretty difficult to get a good fishmonger in the centre of manchester – there’s one that sells clearly 6 day old fish (and I suspect at illegal sizes) so I don’t want to shop there. That leaves me with just supermarket fish, which is just OK at best.

However, I saw that Tesco had mussels on offer, so I grabbed a bag – along with a bag of king prawns.

1. Fry some bacon in a pan with a large clove of garlic. Put some spaghetti on to boil.

2. Deglaze the pan with about a glass of white wine and bubble for a minute or two.

3. Add a tub of double cream and season well. Reduce slightly.

4. Add your seafood.

5. Give it a couple of minutes to warm the seafood through, then add some chopped parsley and the drained spaghetti. Stir in the pan for about 20 seconds and serve!
