This is a versatile cookie recipe, so obviously the chocolate can be swapped for equal amounts of whatever ingredients you please. But this is a great general recipe as the cookies always turn out a little chewy in the middle, which is exactly as a cookie should be.
Heat oven to 170c/150c fan/gas 3.5. Line 1-2 baking sheets with baking paper.
Cream the sugar and butter in a large mixing bowl, then add the egg and vanilla paste, then mix till smooth.
Add the flour and mix until fully incoporated. Stir in dark chocolate chunks until evenly distributed.
Divide into 12 and roll into 3cm size balls. Place on the baking sheets, leaving plenty of rooms for the cookies to expand, as they will make large cookies.
Flatten slightly on top, then bake for 13-15 minutes or until golden at the edges. Do not overbake or you won't get the chewy centre. The centre of the cookie should still look slightly underdone when you remove them from the oven.
