This is an easy, vegan recipe for when you need to feed a crowd. It’s a simple recipe, but it’s good and healthy.
It’s lightly spiced, but you could easily make it hotter by adding more chilli powder.
Ingredients
- 1tbsp vegetable oil
- 1 onion, finely chopped
- 1 large carrot, finely chopped
- 1 green pepper, finely chopped
- 250g mushrooms, finely chopped
- 1/2 tsp chilli powder
- 1 tsp ground cumin
- 1/2 tsp allspice
- 1/2 tsp cayenne pepper
- 2 x 410g tins mixed beans, or kidney beans
- 400g tin chopped tomatoes
- 1tbsp ketchup
- 100g pitted black olives
- 250g tinned sweetcorn
Instructions
- Heat the vegetable oil in a large casserole and add the onion, pepper, carrot and mushrooms and cook for 5 mins until soft.
- Season, then add the spices. Stir often until browned.
- Stir in the beans, tomatoes, ketchup, olives and sweetcorn and then simmer gently for 20 – 30 mins.
- Serve with rice or bread.
