Vegetable chilli

This is an easy, vegan recipe for when you need to feed a crowd. It’s a simple recipe, but it’s good and healthy.

It’s lightly spiced, but you could easily make it hotter by adding more chilli powder.

Ingredients

  • 1tbsp vegetable oil
  • 1 onion, finely chopped
  • 1 large carrot, finely chopped
  • 1 green pepper, finely chopped
  • 250g mushrooms, finely chopped
  • 1/2 tsp chilli powder
  • 1 tsp ground cumin
  • 1/2 tsp allspice
  • 1/2 tsp cayenne pepper
  • 2 x 410g tins mixed beans, or kidney beans
  • 400g tin chopped tomatoes
  • 1tbsp ketchup
  • 100g pitted black olives
  • 250g tinned sweetcorn

Instructions

  1. Heat the vegetable oil in a large casserole and add the onion, pepper, carrot and mushrooms and cook for 5 mins until soft.
  2. Season, then add the spices. Stir often until browned.
  3. Stir in the beans, tomatoes, ketchup, olives and sweetcorn and then simmer gently for 20 – 30 mins.
  4. Serve with rice or bread.
