Mars Bar Cookies

A hot Mars Bar isn’t a new concept; the Scottish famously already have it covered

But if deep frying one isn’t for you, then this recipe may be easier to get to grips with. Pieces of Mars Bar are stirred into chocolate cookie dough before baking, which gives the Mars Bar a molten, soft result. These are definitely best served warm to get the full gooey effect.

Ingredients

  • 1/4 tsp salt
  • 2 mars bars chopped
  • 1/2 tsp flaked sea salt
  • 150 g unsalted butter softened
  • 225 g soft light brown sugar
  • 1 large free-range egg
  • 1 tsp vanilla extract
  • 150 g plain flour
  • 55 g cocoa powder
  • 1/2 tsp bicarbonate of soda

Instructions

  • Preheat the oven to 180°C/Gas Mark 4 and line two large baking trays with greaseproof paper.
  • Cream together the butter and sugar in a large mixing bowl until pale and fluffy; 2-3 minutes.
  • Add the egg and vanilla, beating well, until incorporated. Fold through the flour, cocoa powder, bicarbonate of soda and salt until a dough comes together.
  • Stir in the chopped nougat bars and drop generous tablespoons of the dough onto the baking trays spaced apart.
  • Bake for 8-10 minutes until just set
  • Remove to a wire rack and leave to cool slightly. Serve with a garnish of flaked sea salt on top
