Samphire is in season right now and I absolutely love it. As a sea vegetable that has a slightly salty taste, it’s the obvious perfect accompaniment to fish. Though it isn’t the easiest vegetable to find, in the UK it is stocked in Morrisons supermarket (where I found it) and I’m sure there’s plenty to be found in fruit & veg shops near to the coast.
This recipe is actually quite easy to make but is super impressive due to the wrapped fish and addition of the samphire so would be a great option if you were having people over for dinner.

Serves 2
2 white fish fillets, such as haddock, hake or cod.
2 slices prosciutto
For the lentils
2 tbsp olive oil, plus extra for drizzling
250g pack cooked puy lentils
3 tbsp small capers
100g samphire
½ lemon, juiced, plus 2 lemon wedges to serve
STEP 1
Heat the grill to medium. Wrap each fillet of fish in a slice of prosciutto and drizzle with a little olive oil. Place on a baking tray and grill for 6-8 mins, turning once, until the prosciutto is crisp and the fish is just cooked through.
STEP 2
While the fish is cooking, tip the lentils, capers, samphire and olive oil into a small saucepan and gently heat through, adding the lemon juice and seasoning to taste. Serve the fish with the lentils, lemon wedges and a drizzle of olive oil.
