Nigel Slater is the absolute king of making a few, simply prepared ingredients taste absolutely delicious. This is the perfect example of that. This dish does what it says on the tin; it’s black pudding, roasted with some whole apples and served with a parsnip mash.
There’s no frills or bells & whistles and honestly, this dish doesn’t need them. It’s perfectly balanced; sweetness from the apple and parsnip and rich savouriness from the black pudding. Softness from the apple and the puree provide moisture against the crispness of the black pudding outer. I was actually surprised by how delicious this was. It’s the ultimate ‘less is more’ dish. His original recipe uses celeriac, but had parsnips that needed using up so subbed those in.
