Blue Cheese Hollandaise

Happy New Year! I hope you all had a fantastic festive season!

My mother & step-father (the living legends that they are) bought us a cheese hamper for Christmas, that contained an entire wheel of Stilton. An epic present, I’m sure you’ll agree.

A great use for any leftover blue cheese you have leftover, this hollandaise sauce works beautifully with a nice steak and some chips. A perfect New Year’s meal!

 

Blue cheese hollandaise

  • 1 tbsp white wine vinegar
  • 2 egg yolks
  • 225 g melted butter melted
  • 115 g blue cheese chopped

Instructions

  • Put the white wine vinegar and egg yolks in a heat-proof bowl set over a pan of just simmering water. Whisk until thickened, then slowly add the golden layer from the top of the melted butter, whisking continually while adding the butter until the sauce is thick like a mayonnaise. Discard the white liquid from the bottom of the melted butter. Stir in the cheese and season.
