Gluten free Rainbow Fairy Cakes

While I was doing my usual shop online at Asda, I noticed that they were selling gel food colourings, rather than just the usual liquid ones. I’d been told that these types of colourings are perfect for making rainbow cakes, as they keep their bright colour when baked – and as you can see they certainly do!

You definitely need to use the gel colourings, as normal food colouring just goes varying shades of brown in the oven. Mine are made by home2bake and you can buy them from asda.

First you need to make up your basic cake mix. I made mine gluten free using Dove’s self raising flour and I also used their recipe.

  • 150g butter
  • 150g caster sugar
  • 3 eggs
  • 1/2 tsp vanilla extract
  • 150g self raising gluten free flour
  • 1 tbsp milk

Cream the butter and sugar together until light and fluffy. Add the eggs and vanilla, then the flour and milk.

Then you need to divide your mix depending on how many colours you’re using. I had five, so I split my mix into 5 bowls. Colour your bowls of mix with about a quarter of a teaspoon of colouring.

All you need to do now is simply layer the colours in the fairy cake cases until about 1/2 full. I didn’t worry about being too precise – I just splodged it in – but don’t mix it, otherwise the colours will blend together.

Bake at 200c for 10-12 minutes.

Then all you need to do is decorate them! There’s no point being subtle – I used sprinkles and polka dot decorations on coloured icing to make them look even crazier.

Perfect for a kid’s birthday party – or alternatively just to brighten up a batch of standard fairy cakes!
